White Chocolate Cranberry Orange Biscotti
With Mazola® Vegetable Oil

Ingredients:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup Mazola vegetable oil
- 3/4 cup white sugar
- Zest of one orange
- 2 eggs
- 1 cup dried cranberries
- 3 oz white chocolate chips
Instructions:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, whisk together flour, baking powder and salt.
- In a separate mixing bowl, beat together Mazola vegetable oil, sugar, and orange zest until light and fluffy.
- Beat in eggs one at a time.
- Add the flour mixture to the oil mixture, beating until fully combined. Fold in the cranberries.
- Transfer the dough to your prepared baking sheet. Shape the dough into a log approximately 4 inches wide x 8 inches long.
- Bake for 30-35 minutes or until edges are golden. Remove from oven and allow to cool for 10-15 minutes.
- Using a serrated knife, cut the log diagonally into 3/4 inch slices. Arrange the biscotti onto the baking sheet lined with parchment paper cut side down.
- Bake for another 15 minutes. Remove from oven and allow to fully cool.
- Melt the white chocolate in the microwave in 30 second increments until smooth. Drizzle over the biscotti and allow to fully cool before serving.
