Yogurt Cake
With Mazola® Vegetable Oil

Ingredients:
- ¾ cup + 2 tbsp sugar
- 1 tbsp lemon zest
- ½ Mazola Vegetable Oil
- 2 Eggs
- 1 tsp vanilla extract
- ¾ cup yogurt
- 1½ cup flour
- 2 tsp baking powder
- ½ tsp salt
Instructions:
- Preheat the oven to 350F
- Prep an 8 inch or 9 inch pan by greasing and flouring the pan
- Add the sugar to a large bowl and mix in the lemon zest
- Mix in the oil
- Whisk in eggs one by one, making sure they’re well incorporated
- Stir in the vanilla extract
- Whisk in the yoghurt
- Sift in your dry ingredients (flour, baking powder, salt) and then mix in until the flour is incorporated – the batter may look a little lumpy
- Bake for 25-35 minutes (depending on pan size) or until the cake starts to look golden on top and a toothpick inserted in the middle comes out with a few moist crumbs
- Let the cake cool in the pan for 5 minutes and then invert and serve dusted with icing sugar
