Summer Vegetable Gnocchi

Ingredients:

  • 1 package gnocchi
  • 2 tbsp Mazola canola oil
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 cup diced zucchini
  • 1 cup corn
  • 1 cup halved cherry tomatoes
  • Juice from 1/2 lemon
  • 2 tbsp pesto
  • Salt and pepper to taste

Instructions:

  1. Cook gnocchi according to package directions. Drain and set aside.
  2. Add oil to a large skillet over medium heat. Add garlic and onion and cook about 3 minutes, stirring frequently. Add veggies and a pinch of salt. Cook until lightly browned.
  3. Add gnocchi, lemon juice, pesto and salt and pepper to taste. Stir to combine and cook until heated through.
  4. Serve with an extra squeeze of lemon if desired, enjoy!
