Summer Chops with Grilled Corn & Mango Salsa

Ingredients:
- 1 cup Mazola® Canola Olive Oil Blend
- 1 large onion, thinly sliced
- 2 tablespoons steak seasoning
- 1 tablespoon garlic powder
- 6 thick cut pork chops
- 3 teaspoons Mazola® Canola Oil
- 6 ears corn, husks removed
- 3 cups peeled and diced mango
- 1 cup diced red bell pepper
- 1/2 cup lemon juice
- 1/2 cup diced yellow onion
- 1/4 cup fresh mint, minced
- 1/4 cup fresh cilantro, minced
- 1/2 teaspoon salt
- 2 tablespoons steak seasoning
Instructions:
- Place oil, onion, 2 tablespoons steak seasoning, garlic powder and pork chops in large zip-top bag. Turn to coat; refrigerate overnight.
- Preheat grill. Brush corn with 3 teaspoons oil; grill until ears begin to brown slightly, turning frequently to avoid burning. Cool and cut kernels from ears. Combine corn, mango, red bell pepper, lemon juice, onion, mint, cilantro and salt in a serving bowl. Cover and refrigerate until chops are ready.
- Preheat grill. Remove chops from marinade; discard remaining marinade. Sprinkle both sides of chops with 2 tablespoons steak seasoning. Grill 10 to 15 minutes until internal temperature reaches 160°F; turning half way through cooking.
- Serve with corn mango salsa.
