Ingredients:

Pancakes:

  • 2 1/2 cups all-purpose flour
  • 2 Tbsp white sugar
  • 2 Tbsp baking powder
  • 1/2 tsp salt
  • 2 cups milk of choice
  • 2 eggs
  • 1/4 cup Mazola vegetable oil
  • 1 tsp vanilla extract

Toppings:

  • Fresh fruit like strawberries, blueberries, sliced bananas
  • Walnuts
  • Chocolate chips
  • Maple syrup

Instructions:

  1. Preheat the oven to 425F and line a 13×18 baking sheet with parchment paper or grease with cooking spray.
  2. Mix together the dry ingredients, making a well in the centre. Whisk together the eggs, milk, Mazola vegetable oil, and vanilla extract, then pour into the dry ingredients and mix until combined. It’s okay if there’s a few lumps remaining.
  3. Pour batter onto the prepared baking sheet, spreading evenly with a spoon. Add desired toppings.
  4. Bake in the preheated oven for 15-20 minutes, until golden brown.
  5. Top with additional fruit, nuts, or syrup and serve immediately.
