Ingredients:
Pancakes:
- 2 1/2 cups all-purpose flour
- 2 Tbsp white sugar
- 2 Tbsp baking powder
- 1/2 tsp salt
- 2 cups milk of choice
- 2 eggs
- 1/4 cup Mazola vegetable oil
- 1 tsp vanilla extract
Toppings:
- Fresh fruit like strawberries, blueberries, sliced bananas
- Walnuts
- Chocolate chips
- Maple syrup
Instructions:
- Preheat the oven to 425F and line a 13×18 baking sheet with parchment paper or grease with cooking spray.
- Mix together the dry ingredients, making a well in the centre. Whisk together the eggs, milk, Mazola vegetable oil, and vanilla extract, then pour into the dry ingredients and mix until combined. It’s okay if there’s a few lumps remaining.
- Pour batter onto the prepared baking sheet, spreading evenly with a spoon. Add desired toppings.
- Bake in the preheated oven for 15-20 minutes, until golden brown.
- Top with additional fruit, nuts, or syrup and serve immediately.
