Sanjeok – Meat & Vegetable Skewer Pancake

Ingredients:
- 200ml Mazola® Corn Oil
- 1 green zucchini
- 1-2 king oyster mushroom
- 6 crab sticks
- 1 bunch green onions
- 1 can Canned Meat
- 2 eggs
- ⅓ cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- Pinch white pepper
- 3 tbsp soy sauce (for dipping)
- 2 tbsp white vinegar (for dipping)
Instructions:
- Cut the zucchini, king mushrooms, and canned meat to ¼” thick slices.
- Trim the zucchini, mushrooms, crab sticks, and green onions to be the same length as the canned meat. This way, when we skewer them all onto the toothpicks, they will be uniform in size and length! Note: For 12 skewers, there should be 12 pieces of each ingredient.
- Pour 200ml of Mazola® Corn Oil into a shallow frying pan. Turn up the heat and allow the oil to reach 350 degrees.
- Add the slices of canned meat to the frying pan. Fry 2-3 minutes on each side until golden. Remove the canned meat slices from the oil and place on a paper towel to cool.
- Time to arrange the ingredients on your toothpicks: Starting with the zucchini, poke your toothpick through the center of the longest side. Push it ¾ of the way along the toothpick. Repeat this skewering action with the mushroom, crab stick, green onion, finishing with the fried canned meat, until they are all aligned and snugly stacked on the toothpick.
- Repeat Step 5 until all toothpicks are skewered with the ingredients.
- In a shallow dish add ⅓ cup of flour, 1 tsp garlic powder, 1 tsp onion powder, and a pinch of white pepper.
- In a separate dish, crack 2 eggs and add ½ tsp of salt. Whisk the eggs until no streaks of egg white remain.
- Taking a prepared skewer, coat it in the flour mixture. Shake off any excess, or to be extra gentle brush it off with a pastry brush.
- Dredge the floured skewer in the egg until the entire thing is coated.
- Place your pan with the Mazola® Corn Oil back on the heat and preheat to 375-400 degrees.
- Working in batches of 2-3 skewers, fry them in your Mazola® Corn Oil for 2-3 minutes a side. Flip them with a pair of tongs being careful not to touch the hot oil. Once each side is a nice golden brown remove them from the oil and place on a paper towel to soak up any excess oil.
- Repeat Step 11 until all skewers are fried.
- To prepare the dipping sauce for the Sanjeok: combine the soy sauce and vinegar in a small bowl. These Sanjreok are best eaten right away and dipped in sauce! Enjoy!
