One-Pot Creamy Sun-dried Tomato and Spinach Pasta

Ingredients:

  • 1/2 red onion, diced
  • 1 tsp garlic, diced
  • 1 Tbsp Mazola Canola Oil
  • 1 tsp sun-dried tomato oil
  • 1 tsp Italian seasoning
  • 500g pasta noodles
  • 4 cups cups water (or broth)
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 cup crumbled feta
  • 2 cups baby spinach
  • Salt and pepper, to taste

Instructions:

  1. Heat Mazola Canola Oil and sun-dried tomato oil in a pan over medium heat.
  2. Add the onion, garlic, and Italian seasoning and sauté for 5 minutes.
  3. Add the pasta and water/broth, bring to a boil, and cook until pasta noodles are al dente, stirring occasionally, about 10 minutes.
  4. Reduce the heat and add the cream and parmesan. Turn off the heat and add the tomatoes, feta, and spinach and mix until the spinach is wilted.
  5. Top with more parmesan and freshly cracked pepper.
