One-Pot Creamy Sun-dried Tomato and Spinach Pasta

Ingredients:
- 1/2 red onion, diced
- 1 tsp garlic, diced
- 1 Tbsp Mazola Canola Oil
- 1 tsp sun-dried tomato oil
- 1 tsp Italian seasoning
- 500g pasta noodles
- 4 cups cups water (or broth)
- 1 cup heavy cream
- 1/2 cup grated parmesan
- 1/4 cup chopped sun-dried tomatoes
- 1/2 cup crumbled feta
- 2 cups baby spinach
- Salt and pepper, to taste
Instructions:
- Heat Mazola Canola Oil and sun-dried tomato oil in a pan over medium heat.
- Add the onion, garlic, and Italian seasoning and sauté for 5 minutes.
- Add the pasta and water/broth, bring to a boil, and cook until pasta noodles are al dente, stirring occasionally, about 10 minutes.
- Reduce the heat and add the cream and parmesan. Turn off the heat and add the tomatoes, feta, and spinach and mix until the spinach is wilted.
- Top with more parmesan and freshly cracked pepper.
