Hot Fried Pickles

Ingredients:
FRIED PICKLES:
- 1 (24 oz) jar of pickle spears
- 2 cups of buttermilk
- 2 eggs
- 2 tsp hot sauce
- 3 cups all-purpose flour
- 2 tsp salt
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- Mazola Corn Oil, for frying (about 2-3 inches deep)
HOT SAUCE:
- 1/2 cup butter
- 1 tbsp cayenne pepper
- 3/4 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
Instructions:
FRIED PICKLES:
- Drain the pickle spears and set aside.
- In a large bowl, whisk together the buttermilk, eggs, and hot sauce until combined.
- In another bowl, mix flour, salt, paprika, and cayenne pepper.
- Drizzle a small amount of the buttermilk mixture over the dry ingredients and stir with a fork to create small clumps—this helps achieve extra crispy pickles.
- Dip each pickle spear into the buttermilk mixture, allowing excess to drip off, then coat thoroughly in the flour mixture.
- Heat Mazola Corn Oil in a large skillet to 375°F. Fry the pickles in batches, about 5-6 at a time, for 3-5 minutes or until golden brown and crispy.
- Transfer fried pickles to a cooling rack set over a baking sheet to drain excess oil.
HOT SAUCE:
- Melt butter in a pot on the stove or in the microwave.
- Add cayenne pepper, brown sugar, salt, pepper, paprika, and garlic powder to the melted butter and whisk until well combined.
- Brush the hot sauce over the fried pickles before serving.
