Hot Fried Pickles

Ingredients:

FRIED PICKLES:

  • 1 (24 oz) jar of pickle spears
  • 2 cups of buttermilk
  • 2 eggs
  • 2 tsp hot sauce
  • 3 cups all-purpose flour
  • 2 tsp salt
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • Mazola Corn Oil, for frying (about 2-3 inches deep)

HOT SAUCE:

  • 1/2 cup butter
  • 1 tbsp cayenne pepper
  • 3/4 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Instructions:

FRIED PICKLES:

  1. Drain the pickle spears and set aside.
  2. In a large bowl, whisk together the buttermilk, eggs, and hot sauce until combined.
  3. In another bowl, mix flour, salt, paprika, and cayenne pepper.
  4. Drizzle a small amount of the buttermilk mixture over the dry ingredients and stir with a fork to create small clumps—this helps achieve extra crispy pickles.
  5. Dip each pickle spear into the buttermilk mixture, allowing excess to drip off, then coat thoroughly in the flour mixture.
  6. Heat Mazola Corn Oil in a large skillet to 375°F. Fry the pickles in batches, about 5-6 at a time, for 3-5 minutes or until golden brown and crispy.
  7. Transfer fried pickles to a cooling rack set over a baking sheet to drain excess oil.

HOT SAUCE:

  1. Melt butter in a pot on the stove or in the microwave.
  2. Add cayenne pepper, brown sugar, salt, pepper, paprika, and garlic powder to the melted butter and whisk until well combined.
  3. Brush the hot sauce over the fried pickles before serving.
