Ingredients:

  • 200g glutinous rice flour
  • 70g sugar
  • 160g water
  • 200g red bean paste or black sesame paste (store-bought or homemade)
  • 50g sesame seeds
  • Mazola® Corn Oil, for frying

Instructions:

  1. In a small pot, bring the sugar and water to a boil.
  2. In a medium-sized bowl, add the glutinous rice flour and drizzle over the hot sugar-water mixture.
  3. Mix with a spatula until a smooth dough ball forms, about 5 minutes.
  4. Cover and let the dough rest for 5 minutes.
  5. Transfer the dough onto the table and roll into a log.
  6. Cut the dough into 8-10 even pieces or use a scale to portion.
  7. Roll each piece of dough into a ball.
  8. If filling the dough, press down on a dough ball to form a divot, then gently stretch around the edges to form a small cup.
  9. Add half the weight of the dough ball worth of filling (ie. 25 g of red bean paste for a 50 g dough ball).
  10. Fold the dough over the filling and roll into a ball to seal shut.
  11. Repeat steps 7-10 for each dough ball.
  12. Dip each dough ball in a bowl of water then roll over sesame seeds sprinkled on a plate.
  13. Roll each ball into a circle shape to ensure the sesame seeds stick.
  14. In a large pot or wok, add about 4” of Mazola® Corn Oil and heat up to 350 F.
  15. Fry the sesame balls until golden brown, about 5 minutes.
  16. Once the balls start to float, press down on them with a spatula or strainer to create air pockets which will results in a fluffier final product.
  17. Remove the sesame balls and drain on a wire rack.
  18. Enjoy!
