Spider Web Funnel Cake

Ingredients:

  • 1 and ½ cups Mazola corn oil, for frying
  • 1 and 1/4 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • ¾ cup milk of choice
  • ¼ cup powdered sugar for dusting
  • 1 cup melting chocolate wafers

Instructions:

  1. Pour the Mazola Corn Oil into a large pot (filling it to about 2 inches deep). Set the pot over medium heat and heat the oil to 375°F. Place a wire rack over a baking sheet and set next to the stove.
  2. Meanwhile, whisk the flour, baking powder and salt in a large bowl. Set aside.
  3. In a medium bowl, whisk the egg, brown sugar, vanilla, and milk.
  4. Add the wet ingredients into the dry ingredients and whisk until smooth.
  5. Add ⅓ cup of batter into a piping bag or measuring cup with a pour spout.
  6. Once oil is heated, pour the batter into the hot oil in a large swirl, making sure to connect the swirl layers.
  7. Fry until golden brown, about 1-2 minutes, then flip and cook another 1-2 minutes until golden.
  8. Remove funnel cake with a metal spatula or slotted spoon and place onto the wire rack to cool slightly. Repeat with remaining batter. Dust with powdered sugar.
  9. Melt the chocolate wafers in a bowl in the microwave. Carefully pour into a piping bag or ziplock bag, then snip the tip or one corner of the bag.
  10. Once cooled, pipe the melted chocolate onto the funnel cakes in the shape of spider webs. Serve and enjoy.
