Ingredients:
- 1 and ½ cups Mazola corn oil, for frying
- 1 and 1/4 cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 egg
- 2 tbsp brown sugar
- 1 tsp vanilla extract
- ¾ cup milk of choice
- ¼ cup powdered sugar for dusting
- 1 cup melting chocolate wafers
Instructions:
- Pour the Mazola Corn Oil into a large pot (filling it to about 2 inches deep). Set the pot over medium heat and heat the oil to 375°F. Place a wire rack over a baking sheet and set next to the stove.
- Meanwhile, whisk the flour, baking powder and salt in a large bowl. Set aside.
- In a medium bowl, whisk the egg, brown sugar, vanilla, and milk.
- Add the wet ingredients into the dry ingredients and whisk until smooth.
- Add ⅓ cup of batter into a piping bag or measuring cup with a pour spout.
- Once oil is heated, pour the batter into the hot oil in a large swirl, making sure to connect the swirl layers.
- Fry until golden brown, about 1-2 minutes, then flip and cook another 1-2 minutes until golden.
- Remove funnel cake with a metal spatula or slotted spoon and place onto the wire rack to cool slightly. Repeat with remaining batter. Dust with powdered sugar.
- Melt the chocolate wafers in a bowl in the microwave. Carefully pour into a piping bag or ziplock bag, then snip the tip or one corner of the bag.
- Once cooled, pipe the melted chocolate onto the funnel cakes in the shape of spider webs. Serve and enjoy.
