Bang Bang Chicken Skewers

Ingredients:
- 1½-2 lbs chicken thighs, cubed into 1-inch pieces
- 1 Tbsp Mazola Canola Oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp salt
- 2 Tbsp hot honey
Bang Bang Sauce:
- 1 cup mayonnaise
- 2 Tbsp lime juice, freshly squeezed
- ⅔ cup Thai sweet chili sauce
- ¼ cup Sriracha (adjust to taste)
- 1 Tbsp Mazola Canola Oil
- Cilantro, for garnish (optional)
Instructions:
- In a large bowl, mix the chicken cubes with Mazola Canola Oil, honey and all the seasonings until the chicken is evenly coated.
- Prepare the Bang Bang Sauce by whisking together mayonnaise, lime juice, Thai sweet chili sauce, Mazola Canola Oil, and Sriracha in a medium bowl until smooth.
- Divide the sauce, setting half aside for dipping later.
- Thread the chicken pieces onto skewers, filling them about halfway to three-quarters full.
- Lay the skewers on a baking sheet and brush them liberally with half of the Bang Bang Sauce, ensuring each piece is well coated.
- Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 8-10 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
- As you grill, turn the skewers frequently and continue to apply the sauce until it’s used up and the chicken is nicely caramelized.
Serve the grilled chicken skewers with the reserved Bang Bang Sauce for dipping and cilantro.
