Oregano Chicken with Feta Cheese

Ingredients:

  • 1-1/2 pounds boneless, skinless chicken breast
  • 1 tablespoon Mazola® Canola Olive Blend
  • 1 tablespoon lemon juice
  • 2 teaspoons ground oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black medium grind pepper
  • 1/4 teaspoon salt
  • 1/2 cup (2.5 ounces) crumbled Feta cheese

Instructions:

  1. Heat oven to 375°F.
  2. Coat chicken with Canola Olive Oil Blend and lemon juice.
  3. Combine oregano, garlic, pepper and salt in small bowl. Sprinkle seasoning mixture on both sides of chicken breasts.
  4. Place chicken on baking sheet and bake for 20 to 25 minutes or until no longer pink in center.
  5. Turn oven to broiler setting. Top chicken breasts with feta cheese and broil 2 to 3 or until lightly browned. Serve with rice or pasta.

Recipe Tip: Use 4 teaspoons of leaf oregano in place of ground oregano.
