Marinated Grilled Salmon with Tarragon Butter

Ingredients:

  • 1/4 cup Mazola® Canola Olive Oil Blend
  • 1/2 cup white wine
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon crushed rosemary
  • 1/2 teaspoon leaf thyme
  • 1/2 teaspoon leaf oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black medium grind pepper
  • 1 pound boneless, skinless salmon fillets (can use salmon steaks of equal weight)

Tarragon Butter:

  • 1/2 cup butter OR mayonnaise
  • 1/2 teaspoon tarragon
  • 1/4 teaspoon sweet basil
  • 1/4 teaspoon garlic powder

Instructions:

  1. Preheat grill to medium-high heat.
  2. Combine oil, wine and lemon juice in a resealable plastic bag.
  3. Add rosemary, thyme, oregano, salt, pepper and salmon.
  4. Marinate in refrigerator for 30 minutes.
  5. Remove salmon from bag and discard remaining marinade.
  6. Grill salmon for 7 to 10 minutes, or until fish flakes easily.
  7. Turn once, half-way through cooking time.

Tarragon Butter:

  1. Combine butter and spices in a small bowl.
  2. Cover and refrigerate for at least 30 minutes.
  3. Serve with the Marinated Grilled Salmon.
